Mauro Colagreco has found a style that is unique to him in the interpretation of products and in the contrast of flavors. Freed from his Italian-Argentinian cultural heritage and that of the chiefs with whom he was trained, he draws on his intuition in the local culture on both sides of the border. Inspired by the sea, the mountain and the fruits and vegetables grown in his own gardens, Mauro invents clean, pictorial, colorful plates that play on textures and bold combinations.
